Tasting NotesThis beer began as a mixed culture oak foudre fermented ale that we added 1 lb/gal of whole cranberries to that was then blended with a gin barrel aged saison. While the beer gets it's acidity from the berries, it also gains color and intensity from the gin barrels which were previously used to age zinfandel wine. Rabbit Eyes is also keg and bottle conditioned with a subtle strain of Brettanomyces to create layers of complexity that are complementary to the gin botanics.
